Niko’s is a cozy neighborhood bakery and cafe built on European baking traditions: laminated doughs folded by hand, naturally leavened sourdough, and pastry that never sees a freezer truck.

We serve breakfast, lunch, and early dinner: a diverse selection of unique sandwiches, salads, soups, and specialty entrees, alongside the bakery case that made us who we are.

Every recipe is made in-house, in small batches, and when a batch is gone, it’s gone.

Our Story

The family behind the counter.

Matt Weafer spent more than twenty years in restaurants working toward one thing: a place of his own.

In February 2020, Matt and his wife Jessica bought the very bakery they had helped open. Six years later, they’re still here before sunrise, serving the Greater Owensboro community the same way they started: by hand, from scratch, every day.
